- grate 2 cucumbers in a bowl
- add
- 1.5 cup desiccated coconut
- 2 cups rice rawa (coarsely ground rice)
- 2-3 spoons sugar
- 1.5 spoons salt
- mix by hand and leave to soak for 10 minutes (rawa will soak in cucumber's water)
- [optional] put haldi (turmeric) leaf pieces in the idli pots
- fill pots with idli mix
- prepare steamer:
- put about 2cm of water (not too much otherwise will flow into first row of idli pots)
- heat on full hob heat until steaming
- reduce to medium (6.5) for cooking
- put in steamer for 20-25 minutes

Sweet Cucumber Idli
With some of the mixture you can also make sweet cucumber idli
- prepare/keep some of the same mixture
- add 1 piece (~1/2 cup) of jaggery (unrefined sugar) and mash in with a pestle
- put it lower down in the steamer, since it takes longer to cook than the normal mixture
