Maida Pitta Polo

  1. in a large bowl add
    • 2 cups plain flour (maida aka wheat flour)
    • 1 cup coarse semolina (rawa)
    • salt to taste
    • at least ~4 cups water until no lumps in the dough and runny
    • coriander leaves
    • curry leaves
    • small piece ginger, ~0.25 inch thinly sliced
    • [optional] 1-2 green chillis
  2. follow the same frying instructions as for Pan Polo.
