Teriyaki Aubergine

  1. fill a pot with water
  2. chop 1 aubergine into cubes and put into the water as you chop
  3. chop
    1. 1 big onion
    2. 5-6 cloves of garlic
  4. in a wok heat oil
  5. fry at high medium ~6-7
    1. garlic
    2. 1 dry red chilli
  6. after a couple minutes add the onion
  7. fry until onion light golden brown ~5 min
  8. add the aubergine cubes (throw the water)
  9. mix and cover, reduce heat to medium ~5-6
  10. every 5-10 mins mix until aubergine softens. goes from white to translucent
  11. add
    1. 1 spoon miso paste
    2. 1 spoon gochujang
    3. 2 spoons soy sauce
    4. 2 spoons teriaki sauce
    5. salt
    6. pepper
  12. make a slurry in a cup
    1. 1/2 cup cold water
    2. 2 spoons corn flour
    3. mix until no lumps
  13. add slurry to the wok and immediately mix fully
  14. add some corriander leaves
