- fill a pot with water
- chop 1 aubergine into cubes and put into the water as you chop
- chop
- 1 big onion
- 5-6 cloves of garlic
- in a wok heat oil
- fry at high medium ~6-7
- garlic
- 1 dry red chilli
- after a couple minutes add the onion
- fry until onion light golden brown ~5 min
- add the aubergine cubes (throw the water)
- mix and cover, reduce heat to medium ~5-6
- every 5-10 mins mix until aubergine softens. goes from white to translucent
- add
- 1 spoon miso paste
- 1 spoon gochujang
- 2 spoons soy sauce
- 2 spoons teriaki sauce
- salt
- pepper
- make a slurry in a cup
- 1/2 cup cold water
- 2 spoons corn flour
- mix until no lumps
- add slurry to the wok and immediately mix fully
- add some corriander leaves
